Recipe:
- Start by grinding garlic cloves and Kashmiri red chilli powder with a little water to form a spicy paste.
- Heat mustard oil in a pan until it starts to crackle. Add cumin seeds, a pinch of asafoetida (hing), and turmeric powder, letting the rich fragrance spread through your kitchen.
- Next, saute finely chopped onions and a few curry leaves in the aromatic oil until the onions turn soft and translucent. Stir in the fiery garlic-chilli paste, cooking briefly to release its bold aroma.
- Now comes the main ingredient! Turn off the heat and gently mix in whisked yoghurt, folding it carefully to prevent curdling. Add salt to taste.
- Finally, garnish with freshly chopped coriander leaves and a slit green chilli for a pop of colour and flavour.
